Salice Salentino Riserva DOC

Salice Salentino refined in barrique, of an intense red colour and garnet-coloured highlights. The nose has scents of blueberries and blackcurrant jam, spiced hints of vanilla, liquorice and a toasted touch. In the mouth it is full and velvety, rich of elegant tannins. Suggested with roasted meats, game and ripe cheeses.

TRAINING SYSTEM: Apulian head training with 7000 vinestocks per ha
VINEYARD AVERAGE AGE: 70 years
HARVEST: end of September
YIELD PER HA: 5 tonnes
VINIFICATION: The grapes, after a soft pressure and following separation of the stalks, are macerated at a checked temperature (20 – 22° C) for at least 13 days. Then a malolactic fermentation follows. In Spring the wine is decanted in French barriques where it remains to refine for about 18 months.
MATURATION: at least 18 months in barrique
