Salice Salentino DOC Brut Rosé Negroamaro

Sparkling brilliant wine of a light pink colour called “ onion peel” with a fine and persistent perlage.
The nose is rich and intense with hints of bluberry, redcurrant and rose petals.
To the palate it is smooth and elegant enriched by a nice freshness. Perfect as aperitif and with shellfish, nice also with medium aged chesees

MAIN GRAPES: Negroamaro
SOIL: clayey- muddy
TRAINING SYSTEM: cordon spur with 4000 vinestocks per ha
VINEYARD AVERAGE AGE: 15 years
HARVEST: second decade of August
YIELD PER HA: 7 tonnes
VINIFICATION: the grapes are harvested in boxes and put, uncrushed, into the press. After a short pre -fermentative cold macera-tion, a soft pressing takes place, followed by an alcoholic fermentation of 25 days at 13°C.
REFERMENTATION: “Metodo Classico”- the base wine ferments in bottle for about 2 months, followed by a refinement “sur lie” for about 30 months.
ALCOHOL: 12,5%

SERVING TEMPERATURE: 6-8°C
