Spumante Brut Bianco

Straw yellow with greenish highlights and a fine and persistent perlage. The nose has an intense bouquet with dried fruit hints and fragrances of white flowers. In the mouth it has a great balance between freshness and smoothness. Very good with aperitif and sea-food appetizers.

TRAINING SYSTEM: cordon spur with 4000 vinestocks per ha
VINEYARD AVERAGE AGE: 15 years
HARVEST: second decade of August
YIELD PER HA: 7 tonnes
REFERMENTATION: long charmat (9 months). The hand-picked grapes are harvested before their complete ripening, the bunches are pressed and vinified in white and fermented at a low temperature (14°C).
The second fermentation (prise de mousse) in pressurised tanks, made in December, lasted about one month. The wine refineS on lees for about six moths before bottling.
