Salice Salentino DOC Brut Rosé Negroamaro

Soft foam with an extra-fine and persistent perlage. Old rose colour with auburn highlights. Its elegant perfume is characterized by hints of blueberry redcurrant enriched of a pleasant note of bread crust.
To the palate reveals a refined complexity and an agreeable freshness.
Very good with appetizers, shell fish, perfect also with sausages and medium aged cheeses

VINTAGE: 2010
MAIN GRAPES: Negroamaro
SOIL: clayey- muddy
TRAINING SYSTEM: cordon spur with 4000 vinestocks per ha
VINEYARD AVERAGE AGE: 20 years
HARVEST: second decade of August
YIELD PER HA: 7 tonnes
VINIFICATION: the grapes are harvested in boxes and put, uncrushed, into the press. After a short prefermentative cold maceration, a soft pressing takes place, followed by an alcoholic fermentation of 25 days at 13°C.
REFERMENTATION: “Metodo Classico”- the base wine ferments in bottle for about 2 months, followed by a refinement “sur lie” for about 42 months.
